Great for a pot luck, my sister-in-law, Cherilyn, shared her wonderful broccoli bacon Crasin (or raisin) salad recipe. We all love it. ~ Nancy
Ingredients
- 5- 10 bacon strips cooked crispy and crumbled (1/2/ lbs.) (Turkey Bacon can be a substitute)
- 1 bunches fresh organic broccoli, florets only (5-6 cups)
- 1/2 cup raisins or Craisins®
- 1 small red onion, finely diced
- 1/2 cup sunflower seeds (cashews or sliced almonds could be used instead)
- Dressing:
- 1 cup mayonnaise
- 2 tbs. white wine vinegar
- (Note: if you use balsamic vinegar it will make the sauce a brownish color)
- 1/4 - 1/2 cup sugar
- 1 tsp curry powder
Instructions
- Separate florets from broccoli stalks. (Save the stalks for another use - you can freeze for later.)
- In a medium bowl combine the bacon, broccoli, raisins or Craisins®, sunflower seeds and diced red onion and set aside.
- In a separate small bowl combine the mayonnaise, sugar and vinegar, and curry powder; mix well and pour over the broccoli mixture.
- Mix salad thoroughly to make sure everything is well coated.
- Taste and add more sugar or vinegar if needed.
- Cover and refrigerate for at least 1 hour.
- Stir well before serving.
