Broccoli Bacon Salad

Great for a  pot luck, my sister-in-law, Cherilyn, shared her wonderful broccoli bacon Crasin (or raisin) salad recipe. We all love it. ~ Nancy

Broccoli Bacon Salad with Raisins or Craisins®

Ingredients

  • 5- 10 bacon strips cooked crispy and crumbled (1/2/ lbs.) (Turkey Bacon can be a substitute)
  • 1 bunches fresh organic broccoli, florets only (5-6 cups)
  • 1/2 cup raisins or Craisins®
  • 1 small red onion, finely diced
  • 1/2 cup sunflower seeds (cashews or sliced almonds could be used instead)
  • Dressing:
  • 1 cup mayonnaise
  • 2 tbs. white wine vinegar
  • (Note: if you use balsamic vinegar it will make the sauce a brownish color)
  • 1/4 - 1/2 cup sugar
  • 1 tsp curry powder

Instructions

  1. Separate florets from broccoli stalks. (Save the stalks for another use - you can freeze for later.)
  2. In a medium bowl combine the bacon, broccoli, raisins or Craisins®, sunflower seeds and diced red onion and set aside.
  3. In a separate small bowl combine the mayonnaise, sugar and vinegar, and curry powder; mix well and pour over the broccoli mixture.
  4. Mix salad thoroughly to make sure everything is well coated.
  5. Taste and add more sugar or vinegar if needed.
  6. Cover and refrigerate for at least 1 hour.
  7. Stir well before serving.
