We had this for breakfast during the 2010 Christmas holidays while visiting my daughter, Heidi. It was a great meal – eggs all light and fluffy. Yummy!
Ingredients
- 10 eggs
- 1/2 cup flour
- 1 Tsp baking powder
- 1/4 Tsp salt
- 2 cups cottage cheese
- 1 lb Monterrey Jack cheese, shredded (or 1/2 lb Monterrey Jack cheese plus 1/2 lb Cheddar cheese, shredded)
- 1/2 cup butter
- 2 – 4 oz cans diced green chilies
Instructions
- In large bowl, beat eggs. Add remaining ingredients. Mix well. Pour into a greased 9 x 13″ baking dish. Bake at 350 degrees for 35 minutes.
