My mother made these enchiladas for a family dinner many years ago. (At least 25 years ago!) They were so much better than any enchilada I had eaten at a Mexican restaurant. Maybe it isn’t authentic. But I promise you this they are so much better than a little chicken in a tortilla.
A wonderful fresh crunchy lightly curried chicken salad, great for lunch or dinner. Roll in a wrap put on your favorite bread, or put a nice heaping tablespoon or two on individual fresh crisp salad fixings for a super tasty cool meal. Fantastic no matter what the season!
A sweet and savory dish from Southern Africa with an influence from Malaysia and the Indies. This one will always be a most favored and top-selected dish when we have company for a meal. Great for our friends who are gluten-free, dairy-free, and vegan! A BIG thanks to Sundays at Moosewood for this wonderful recipe …
A classic sweet-and-sour chicken recipe that is lower in calories, fat, and cholesterol. This is accomplished by using no-stick spray instead of oil, reducing the amount of sugar, and using pineapple in its juice. Our grandchildren (ages 11 and 15) love this recipe (but over white rice, not brown). It is great for meeting all …

I came across a recipe I made over 25 plus years ago that my kids really enjoyed! I can’t name anyone I made this for that didn’t really liked too! I can’t tell you where I may have found this recipe. I had handwritten it on a card and my memory has no recollection as …
This is a favorite winter meal. Everybody I have made it for returns for seconds. It is filling and thick with veggies including sweet potatoes which gives it a wonderful flavor. This recipe was adapted from Carolina Vegetable Soup Moosewood Restaurant New Classics – one of my favorite cookbooks ever.
My husband, Bruce, rarely cooks. Mostly he fixes salads for dinner, sandwiches for lunch and for breakfast, French toast. His sister, Gayle, who lives in So. California, sent this recipe to him and with a few little personal changes, this became a specialty all his own. (I am so happy he is cooking – and …
Great for a pot luck, my sister-in-law, Cherilyn, shared her wonderful broccoli bacon Crasin (or raisin) salad recipe. We all love it. ~ Nancy I love feta – how do you think this would taste with the addition of feta? ~ Nancy “Sometimes I do have to make more dressing depending on how much salad …
This savory dish is seasoned with cumin and sweet raisin, which together is a great compliment and with the added veggies and beans a wonderful whole meal. My husband, Bruce, gave it a 5/5 rating. We will be enjoying this again and again! I found the original recipe on “fitsugar.com.” They had modified it from …
A Tangy Sweet and Sour Sauce recipe I got from an old high school boyfriends mother in the late 1960’s. I used to beg my mom to let me cook because I loved the taste of this sauce on our burgers! Quick and easy! Ingredients: 3 – 4 tsp. of butter or margarine 1/2 medium …
A wonderfully tasty Cranberry Jello Salad recipe I found in my card file given to me by my old friend, Dee L. , in Nevada City, CA.
