Chicken Salad Curry with Grapes and Almonds
A wonderful fresh crunchy lightly curried chicken salad, great for lunch or dinner. Roll in a wrap, put on your favorite bread, or put a nice heaping tablespoon or two on individual fresh crisp salad fixens for a super tasty cool meal.

I find the best tasting and best priced canned chicken breast chunks at Costco.
I order my favorite Sweet Curry Powder from Penzey's. In my opinion, they have the best spices and are within my budget!
Ingredients
- 2 - 12.5 oz cans chicken breast chunks
- 1/2 cup Craisins
- 1 cup seedless green grapes. (Cut each in half so they spread - not roll!)
- 1/2 cup *roasted chopped almonds
- 1/2 cup mayonnaise
- 1-1/4 tsp. sweet curry powder
Instructions
- Add all ingredients into a bowl and stir. Serve over lettuce, spread over bread or roll up in a wrap. Add lettuce for an additional crunch.
- To roast almonds: spread whole shelled almonds on a cookie sheet; cook at 350 degrees for 10 minutes. Let cool.
