My mother made these enchiladas for a family dinner many years ago. (At least 25 years ago!) They were so much better than any enchilada I had eaten at a Mexican restaurant. Maybe it isn’t authentic. But I promise you this they are so much better than a little chicken in a tortilla.
A wonderful fresh crunchy lightly curried chicken salad, great for lunch or dinner. Roll in a wrap put on your favorite bread, or put a nice heaping tablespoon or two on individual fresh crisp salad fixings for a super tasty cool meal. Fantastic no matter what the season!
A classic sweet-and-sour chicken recipe that is lower in calories, fat, and cholesterol. This is accomplished by using no-stick spray instead of oil, reducing the amount of sugar, and using pineapple in its juice. This is a favorite winter meal. Everybody I have made it for returns for seconds. It is filling and thick with veggies including sweet potatoes which gives it a wonderful flavor. This recipe was adapted from Carolina Vegetable Soup Moosewood Restaurant New Classics – one of my favorite cookbooks ever.
